What you need:
2 eggs
150ml cooking oil
300ml milk
250g sugar
350g flour
50g non-sweet cocoa
150g marmelade - I mixed some plum and apricot jam :)
1/4 teaspoon rum essence
10g baking powder

Preparation:
Preheat oven on medium heat.
Combine flour, cocoa and baking powder, stirring slightly
In another bowl mix eggs and sugar until the sugar has melted. Add the oil, jam, milk and flour composition in the end. Whisk the batter well until the flour is fully absorbed, and without bubbles.
Put about 2 tablespoons from this composition in each muffin hole. Insert the muffin pan in the oven and bake for approx. 15-20 min. After that, let them cool in the pan for 5 minutes.
I frosted half of them with white chocolate (melted with a spoon of milk and a few drops of oil), and the other half with chopped chocolate candies.
They came out super delicious and with a totally creamy touch because of the home-made plum preserve (my favourite).

What you need:
150g preboiled rice
2 slices of ham cut into small pieces
2 eggs
50g green peas (I used canned ones)
50g grain maize (also canned)
1 small carrot, shredded
1 tablespoon soya sauce
2 tablespoon cooking oil

Preparation:
Use the eggs to make a simple omelet, pancake style, and cut it into small cubes.
Wash the rice well for about 15-20 minutes in cold water to soften it.
Drain and pour it into a saucepan and cover with cold water (about 2-3 cups). Cook above medium low heat, stirring from time to time. When the water has evaporated, the rice should be ready.
In a Wok-type pan fry the oil and add the corn, peas, omelet and ham. Stirr them on medium heat for about 5 minutes and then add the rice followed by the soya sauce and spice it up with salt / pepper according to your taste. Mix it well for about 10 more minutes and that's it!

What you need:
125 g butter or margarine
1 medium orange
3 eggs
200g sugar
250g flour
10g baking powder
100 ml milk
12-15 chocolate squares or pralines (1 praline / muffin)

Preparation:
Melt the butter a little bit and let it cool. Wash the orange with warm water then peel it and squeeze the juice.
Separate the eggs, whisk the whites until stiff and then add the sugar, and beat slightly a little more. Add the yolks, mix and add the melted butter, orange peel & juice and the milk.
Stir well and sift in the flour mixed with baking powder and whisk some more
Fill half of each muffin, place a chocolate square on top of the batter and top off the muffins with more batter.
I baked them for 10 minutes, because my oven is a real burner, but usualy they might need a little more time (max. 20 minutes)

Yes, I know there are billions of them on the web already... and I would like mine to be nr. one billion and one.
At this moment I have 2 other blogs - one about cooking and other stuff I like, written in romanian, my nother language, and the second - a photoblog, depicting some of my experiments with my amateur camera... and I just felt de compunsion to get another one :)
My name is Raluca, I live in Bucharest, Romania (not such a lovely city)... I love baking, movies, kittens, literature, travelling and nature in general... although most of the time I am a couch potato, and I hope you will enjoy my posts
